Recipe 3: Pickled Mustard Soup

A very simple homemade soup for 4 person.

Ingredients:

Pickled mustard (can purchase it from Mydin - very cheap, only Rm1++)
2 Chicken ribs 
-it can also be replaced with drumsticks
1 carrot
1 tomato
1 pinch of white pepper
Water

Procedure:
1. Clean the pickled mustard. Make sure the red colour chilies are washed away.

2. Wash the chickens, carrot and tomato.
3. Cut the pickled mustard into slices.
4. Cut the carrot and tomato (make sure the size is big).
5. Place all the ingredients in the cooker. Wait for about 1 hours. 

*No need to add salt because the pickled mustard itself is salty. 
* Add white pepper at the end.

It is now ready to serve. :D

Recipe 2

I'd always likes glutinous rice, but not those sweet ones, thanks...This dish makes me think of home.... :'(

Rice cooker chicken glutinous rice


200g glutinous rice, washed and soaked for half day

Some mushrooms, washed, soaked and sliced

50g or 1 piece of chicken meat (thigh or breast), skin and bones removed, sliced and marinated with soy sauce

2 handfuls of black eye peas, rinsed and soaked until it swells

2 cloves of garlic, chopped

2 salted duck egg yolks

2 tbsp cooking oil

5 tbsp dark soy sauce

3 tbsp of chicken stock (optional)

Salt to taste

Pepper powder

Toasted sesame seeds (as garnish)

Steps

1 Heat up the rice cooker by pressing the 'cook' button.

2 Pour in the cooking oil. Wait until its hot enough. Fry chopped garlics until you can smell the fragrance.

3 Put in marinated chicken slices and mushrooms. Fry until the chicken is half cooked.

4 Throw in the black eye peas and close the rice cooker lid. Let it boil for 3 mins. Then, add chicken stock, salt, pepper and dark soy sauce.

5 Pour all the soaked glutinous rice and water into the rice cooker and mix well. The water level should be slightly higher than the glutinous rice level, but not more than half of the tip of your index finger (1/4 if u want firmer and chewy texture)

6 Finally, add in the salted duck egg yolks carefully in between the glutinous rice.

Close the lid. Then wait for the rice cooker to switch from cooking to warm and wait for 10mins. This will let the moisture settle and prevent glutinous rice from sticking to the bottom of the rice cooker.

Serves 2-3 persons.

Tips: less cooking time is needed if glutinous rice is soaked long enough. Chicken breast has a harder texture but less bones, chicken thigh has smoother texture but more effort is needed to remove the bones.

This is one of my most LOVED recipe.. My friends love this cake very much *proud face*..xDD
I got this recipe originally from a website online, then i tried to improvise the recipe into something easy and practical. This is how creativity, trial and error work together eh?? ^^

Rice cooker banana/apple cake
Ingredients:
Part A
2 Apples or 2 bananas (sliced)
2 tbsp butter
3 tbsp Brown sugar
Part B
1/2 cup or 70g flour
1/4 cup sugar
1tsp baking powder
1 pinch salt
3 tbsp butter
2 eggs
3 tbsp milk powder (optional)
Part C
Milk powder as much as u like
Icing sugar
Yoghurt (any flavour will do)
Chocolate rices, chips, sprinkles (optional)

Steps:
Part A
Heat up a pan. Melt butter in part A. Add sliced apples or bananas. Cook for around 5 mins or until u can smell the fragrance. Add brown sugar and keep on heating until it caramelized (sugar become sticky or viscous).
Part B
In a mixing bowl, mix all the ingredients in part B together. Add in part A. Mix well. Set rice cooker to 'cook' and wait until it automatically switch to warm. Grease bottom and side of rice cooker. Pour in the mixture of part A and part B. Set the rice cooker to 'cook' again. It will automatically switch to warm again after some time. Wait for around 5 mins then press the 'cook' button again. Do not forcefully press the cook button of the rice cooker when it keeps on jumping to warm as u will get burnt cake as your end product. Repeat the pressing and waiting until a toothpick comes out clean when u insert it in the cake.
Part C
While waiting, mix 2 tbsp of yoghurt, 4 tbsp icing sugar and mix well. If its too watery, add milk powder until it becomes viscous. The proportion of icing sugar to yoghurt and milk powder can be altered according to your preferences.
When the cake is done, switch the rice cooker off and let it cool down. Remove the inner part of the rice cooker and invert it carefully on a plate. Spread part C evenly on the cake and decorate with chocolate rice, sprinkles, etc.
Then tadaa~ your cake is done. Serve chilled or hot from the rice cooker as u wish..xDD

survival tips 1

Survival tips:
1) Always stock up food. Dried items such as rice, noodles, biscuits, etc could last a long time. Check the expiry date before buying. Sometimes during sales in Mydin, feel free to stock up food. I bought 5 kg of brown rice to last until the end of sem. Food is never too much, esp when sharing with friends. But don't waste la, of course.

2) Get a rice cooker. Sometimes when u are fed up with cafe food, or just simply want to eat some simple, msg-free lunch/dinner, self cooking is always the best option. Rice cooker is one of the basic electrical items u should own.

3) If u are keen on self cooking, always buy some vegetables. Potatoes (keep in dry places, they can last the longest), tomatoes (choose greener ones), carrot (min 2 days shelf life, depends on the condition). Potatoes+carrot+tomatoes soup= ABC soup, they are easy to prepare and nice to eat with rice. Add some dried scallops to enhance the flavour...yum~~~

4) Get more spoons, forks and bowls. More is better than less. U'll never know when u need them. Make a potluck session once in a while with some close friends, and share recipes?? xDD

Preface?

So, u might think that getting enrolled in health campus in kelantan is your worst nightmare.. No good food, no entertainments (no cinemas esp), no night life (no clubbing)... but hold on, who says kelantan has no good food? There're loads of good food waiting for you to explore (Four seasons, chiang mai, 168, etc). Who says kelantan has no entertainment? There's a snooker centre and a bowling centre in KB mall. Who says kelantan has no night life? There're pubs around KB which opens until 12am, and if u don't like pubs, roadside stalls which open past midnight are good places to hang out with friends for some teh beng, etc, but please be reminded to always ask for less sugar beverage in kelantan. xD

In the next few posts, i will share about my experiences in usmkk, like how to cook nice dishes with just 1 rice cooker and 1 multipurpose kettle *proud face*, how to explore KB for good food, how to enjoy life in kelantan, etc. Hopefully these tips will be useful to all...^^
